Ribena: “There are two sides to every pancake.”

Every kid and adult love pancakes!

My girls are big fans of them.

I tell you, these hearty flapjacks can make my girls the happiest, especially when their mummy prepares them from scratch.

So last weekend, I decided to score extra brownie pancakes points with my girls and made for them… 

RIBENA BLACKCURRANT JAM PANCAKES!

Thanks Ribena for the recipe book! So handy and so useful with so many sweet treats for the little ones especially!

Oh yes, I made everything from scratch, including the Ribena blackcurrant jam!

The blackcurrant jam is just soooooooooooooooo good, trust me! You must try it out!

Ribena Cordial can be used for cooking and baking, other than just a drink.

Did you know that?

It would have been faster if I had made everything on my own. But because it was a Youth Day holiday and all, I decided to bring out my Ribena apron and recipe book….

Ribena Blackcurrant Jam Pancakes

Prep time: 10 minutes

Cook time:  6-7 minutes

Ingredients:

2 cup self-raising flour

¼ teaspoon salt

¾ teaspoon baking soda

5 tablespoon sugar

1¾ cup milk

2 eggs

½ cup melted butter

1 teaspoon vanilla essence

3 tablespoon Ribena Blackcurrant Berries Jam

Serving suggestions:   Home cooked Ribena Blackcurrant Berries Jam

Directions:

1               In a large mixing bowl, mix in self-raising flour, salt, baking soda and sugar

2               Whisk eggs, milk and vanilla essence until well combined and smooth.

3               Mix in the flour mixture and melted butter, stir mix well.  Leave to rise for about 30 minutes then briefly stir mix in the Ribena Blackcurrant Berries Jam.

4               Pour 1/4 cup of batter per pancake onto preheated lightly greased griddle or non stick frying pan. Cook 2 to 3 minutes per side or until golden brown, turning when  pancakes begin to bubble.

5               Serve pancakes with home cooked Ribena Blackcurrant Berries Jam.

 

HOW TO MAKE THE RIBENA BLACKCURRANT BERRIES JAM, THEN?

Here goes.

Yields about  2 cups

Prep Time: 10 minutes

Cook Time: 20-25 minutes

 

Ingredients:

200g blueberries, stemmed & rinsed

40g fine sugar

 cup Ribena Blackcurrant Fruit Cordial Drink (Glucose)

1½ tablespoon water chestnut flour

Directions:

1.  Place the blueberries in a zip block bag add in sugar and ½ cup Ribena Blackcurrant Fruit Cordial Drink.  Refrigerate it for about 8 hours.

2. Mix chestnut flour with 3 tablespoon Ribena Blackcurrant Fruit Cordial Drink.  Set aside.                                                                                                                                                        

3. In a deep sauce pot, combine chilled sugar blue berries and balance Ribena juice.  Bring to a boil over medium heat, stirring constantly until the sugar dissolves.  Mix in the Ribena cordial chestnut flour mixture.

4. Return to boil and then lower heat and simmer for 20 minutes, or until the skins of the blueberries are very tender and the mixture thickens.

5       Hot jam is ready to be served with the pancakes!
